OUR PRODUCTION ON PANETTONE IS LIMITED PER WEEK. IF YOU ORDER OTHER ITEMS IN ADDITION TO PANETTONE, THESE WILL BE SHIPPED/AVAILABLE FOR COLLECTION AT THE SAME TIME AS YOUR PANETTONE.
POSTAL ORDERS FOR W/C 22ND DECEMBER WILL BE SHIPPED ON 22ND DECEMBER FOR DELIVERY ON THE 23RD DECEMBER.

The classic Panettone packed to the brim with British Butter, Egg Yolk, Candied Orange, Amarena Cherries and Jumbo Raisins. Topped with a Crispy Almond Topping and Pearled Sugar.
Our bakers nurture with precision and dedication a naturally fermented 'pasta madre' (a dedicated sourdough starter specifically created to use only in panettone) that will rise our Panettone. It is precisely fed 2/3 times daily and kept at highly specific temperatures and PH level until it is ready and powerful enough to offer the distinctive ethereal rise to the panettone. Our Panettone is made with no commerical yeast and is risen through natural fermentation only.
The challenge comes in rising a dough and maintaining that peel-able brioche like crumb from a dough that is so heavily enriched with butter and egg yolks whilst producing a product without the use of commercial yeast. Each Panettone takes 3 days to make from start to finish.
It is a true masterpiece of baking, one which our head baker Ryan has worked tirelessly on perfecting over the past 5 years.
Panettone will come packaged in a beautiful Pollen Panettone box and sealed in a bio-degradable bag for freshness.
The Panettone will keep unopened for 3 weeks. Once opened, reseal and eat within 7 days. Best served warm or toasted.
